It's built from an industrial ice box. It has a 1500 watt heating element. We ran it for several hours yesterday noting the thermostat compared to the thermometer. It would hold 165 perfectly. We turned it up and down to different temperatures from 140 all the way up to 220 to see if it could maintain hot and cold temperatures for sausage smoking. All while performing in cool windy conditions outside. This really did turn out excellent.

These pictures don't reflect it, but there's a deflector that goes on top of a cast iron pan above the heating element. The pan holds the wood chips and there's not a whole lot of grease. Pork fat renders at 160, so if you smoke much beyond that your sausage will not be good. The grease that does render will drip onto the heat deflector.
