Old School Beef Jerky & Beef Bacon Cold Smoked

Postby jmcrig » Sun Feb 16, 2014 6:43 pm

Had 10# of beef jerky seasoned with Oakridge Black Ops rub, and 5# of beef plate cured with chipotle & black pepper that went in the Good-One Rodeo for about 48 hrs. of cold smoke.

The bacon has 30 hrs. of cold smoke already on it when I added it to the rodeo.

Done. I get out to Mesa occasionally, and the next time I'm out there you're going to get a PM. That stuff looks great.

Beef bacon is done. A day or so in the fridge, and I'll slice it.

Well, the jerky became treats for BBQ Dog. Seasoning was good, but process wasn't. The bacon on the other hand, was/is outstanding.

Nice! I'm about to kick my wardrobe smoker into high gear soon with about 20 lbs of Jerky as well. I should be leaving for training in Wisconsin on March 3rd and want to have plenty Jerky to take with me. Lol

Wasn't that happy with the no heat method for the jerky. I'll go back to my old method. Beef bacon as you can see was outstanding.
