Second Attempt at Texas Hot Gut Sausage

After returning from my trip, I had to try another attempt at some Hot Gut Sausage.

Done drying, and time to refrigerate.

Ready to sample. Looks great, but taste isn't there. Time to tweak on it.

Mark doesn't look like its missing anything from here. But I do know what you mean with tweaking.
I do that with most of my cooks. One would think sooner or later I would get it right. But what the heck it all gets eaten. Looking good. CF :D
