Does anyone know this recipe? It is better known as Owens, I think. My boys love it, have tried a couple different recipes, get close but missing something.

What kind of breakfast is it? A scrambler of some sort? I'm familiar with Bob Evans & Owens. We had a restaurant up the road that turned out a good breakfast years ago. Of course Owens sausage is a regular around the house.

Thanks Twoguysbbq, I did not know Fiesta made a that. I am a big fan of there spices. How much do you use say for 25 lbs meat? We make sausage every year, I just really like Owens, maybe one day I will find the recipe. I can get real close on Jimmy Deans, but not a big fan of sage.

Fiesta has good stuff, one 4oz bottle is good for about 8lbs of meat.

here is a basic recipe I have been working on, it is a lower salt variety, lower fat variety than what one finds in the stores.
for your convenience, I have measured and converted so it can be scaled up or down on any of the flavors you do or do not like...
this is a "you can taste the meat" not just spice variety and little or no grease left in the pan
the summary is so you can make as little or much as you want if you have a good scale.
enjoy....
Breakfast pan sausage
Basic recipe
3 lb. of ground pork 80-20 is preferred (453.5 x 3) ---1360.5 grams-100%
1 tablespoon of kosher salt---20 grams---1.470047%
1 ½ teaspoon of dried sage---2grams---0.147005%
¾ teaspoon of black or white pepper---1.75 grams---0.128629%
¾ teaspoon of brown sugar---4.5 grams---0.330761%
½ teaspoon of thyme---0.8 grams---0.058802%
¼ teaspoon of marjoram---0.75 grams---0.055127%
1/8 teaspoon of ground cloves---0.45 grams---0.033077%
1/8 teaspoon of red pepper flakes---0.5 grams--- 0.036752%
In summary:
Per ounce of meat:
.417 gram of Salt
.042 gram of Sage
.036 gram of black or white pepper
.094 gram of brown sugar
.017 gram of thyme
.016 gram of Marjoram
.009 gram of Cloves
.010 gram of red pepper flakes
So to make a pound of sausage you would multiply the above by 16 because there are 16 ounces in a pound.
