So what do you do when you've got the house all to yourself on a Friday night? Well duh, you start curing your own bacon of course [GRINNING FACE WITH SMILING EYES]. The first one is a jalapeño/black peppered bacon that I will smoke with hickory, and the other is a sweet Pecan with a little heat, that will also be hickory smoked. It will cure till next weekend, then I'll smoke it, slice it and vacuum bag it up into 1 pound bags.
