Got to harvest an Axis doe last weekend. Got summer sausage in the works now. 50# total, going to ferment in the garage tonight and on the smoker tomorrow!

Wild game summer sausage - - one of the things that I miss from Hunting - - I used to get some Bambi done up in jalapeno cheese summer sausage - - - - those looks great

No real reason, Matt, except "been there and done that" - - - I was ADDICTED BIG TIME and thought that Opening Day should have been declared a National Holiday. When I got out of the Hobby, I was harvesting 5 deer a year plus two Rio Grandes and never needed to buy meat at the Grocery Store. Of course my Sons and Grand Kids are addicted now so I never want for the taste. - - didn't mean to Hi-jack your Thread

Not high jacking at all sir! I'm still in the National holiday phase My oldest just turned 6 and is a deadeye with the .22, probably get him a deer rifle this summer, then it's all about him.

Cooked a patty today to test seasoning, was great. 20# axis, 20# pork and 10# brisket, can't wait to get some smoke to it.

Full house today! 30 on the first round and 20 on the second, came out fantastic.
