I was going to cook some corned beef today but couldn't find the piece I was looking for. Nuts. Doesn't help having 4 freezers,lol.

So we have a problem.. We don't have the cooler/fridge space to keep up with the demand for our Rueben. I have to get creative on the cure process now and hope it is comparable. I am pre slicing the flat and then curing it. This should cut the cure time down tremendously; I am shooting for 48 hours tops. My thoughts are this will work as it is the way jerky is done. Lol!

So slicing it up then curing it, like jerky marinade, worked like a charm! I started another batch yesterday afternoon and tossed a couple slices on the flat top this morning. Some prime corned beef!! The flavor was perfect. Party of 6 ordered Ruebens at lunch today and they said they were the best they've had outside of Katz's Deli.
Had a couple tears of joy welling up in my eyes when I heard that. Lol
