Me and my boys went to HEB the other day to grab some lump and a pork loin, when I spotted some pork belly. I told the boys I wanted to cook it on the grill, but they wanted to try and make some bacon. So I mixed up some Kosher salt, white sugar, black pepper, paprika, and a little pink salt, and told them to get after it. They rubbed it down and put it in a pan, and will have to flip it every day. When it's time, they'll wash it down and put it in the fridge to air dry. Then they'll fire up the smoker and giver a ride in the smoke bath for a few hours. Here's some pics from the first rub down, and I'll update it when it's time to throw some smoke on it.

Looks like a great start. I just remembered I have a belly in the freezer. Time to get another batch of bacon going.

I'm watching this as well. I never seem to find any belly though, other than my own. Guess I need to look harder. I'd love to try this.

We're Samsclub, even though I wouldn't walk into a walmart for a free basket full of prime. Costco is about the same type of place, right? I'll ask my WinCo meat guy and see if he can get me one. I'd like to try this.

Yes, membership based wholesale club. I keep my membership mostly for the meet department.
You can go in and tell them you are considering joining but want to check it out. They will give you a guest pass.

I'm not sure that's a good thing. We use a lot of bacon.
