Started another batch
Got 4 eye of rounds in the cure last night for more dried beef.
Also trying my hand at Canadien Bacon. 10 lb oink loin cut into 3 sections and curing in my beer fridge.
Still got room on the bottom of the fridge for a 6 pack or two of Dos Equis XX I'm thinking
I'm hoping it will all make for special gifts for Christmas....except for the beer of course

Took the oink and cow out of the cure today after 12 days.
Cut 1 section each of pork and beef to check for curing. Looked good
Did a fry test on both to see if they where too salty and if they needed a ice bath.
Neither was too salty....the flavor of the Canadian Bacon was unbelievable....so they both got a rub of GBP, onion and garlic powder and went back in the fridge till 6 am tomorrow morn when they go in the smoker.

CB and dried beef resting in the fridge.
Smoked them yesterday. Thank gawd for my pellet pooper and the new smoker box. Rained hard all day yesterday'. Would of been miserable tending to a fire in that rain for 12 hours.
Slice and package tomorrow. Just in time for Christmas gifts.....that is if its eadible

Got it all sliced and vacpacked last night. Was by far the most time consuming part of the whole process.
Sliced the dried beef a little thicker this time. Should be easier to separate the slices once out of the bags I hope. last time I sliced them paper thin which made the slices a pain in the ars to separate.
