Got a package today and became very excited when I realized it was from the PNW. Low and behold I was correct and inside was a vacuum sealed bag of Smoked Salmon (the West Coast kind - can't wait) and another vacuum sealed bag containing Dried Beef and Canadian Bacon from Pork Loin. I opened the later and sampled some of each. Let me just say this - - - they are AWESOME and after munchin on those roasted pecans from this morning, I have sufficiently Sodiumized myself for a day or so. Now, I'll let my brain run wild with different ways to enjoy these beauties.

I had been picking WB's brain on how he cured the Dried Beef so he sent me some to try and NOW I know "Ize gotz to do dis before too long" :tup:

That looks what we call corned beef, the colour is beautiful,great in a sammich.

Lightly browned and then chopped up a couple slices of the Canadian Bacon this morning and used it in my Breakfast Flat Taco along with Owens Hot, Egg, Pepper Jack, Corn Torts, Salsa and Pepper Jelly :cheers: :cheers: :cheers:

The next batch of CB I'm going to leave out the pepper and garlic powder and add a little more brown sugar. Supposed to give it more of a ham flavor.

OK, this is not a second opinion this is a THIRD opinion. However, I think it needs to be called:
PNW MEETS TEX-MEX and SOONER SAUCE - - because today I opened the vac seal on a chunk of the Smoke Salmon.
I did a taste test and found a hint of Sweetness so the wheels started spinning and I decided to make me some Smoked Salmon Tacos and Lawdy am I glad I did. When he told me that this stuff they call Salmon down here didn't compare to the Fish up there, I had no idea how RIGHT he was until now. :salut:
