Summer Sausage with green chilis

Hey Guys, Any idea the ratio of roasted hatch green chili's per pound of meat for summer sausage

Can't answer that one but I can offer that Hatch comes in two flavors, mild and VERY hot, so be sure which one you are buying as the amount required to burn your face off will vary.
I'm a pepper lover and my palate is pretty much asbestos...

^^^ what he says. But for the ratio, I would go about 1 to 1.5 per lb. I usually use about 3 jalapenos per lb, but hatches are bigger. Lol

Probably too late, but I do 1# chiles or cheese per 10# 's of protein.
