My First Sausage
I gotta tell'ya; I don't know if this is worth it; I'll know tomorrow when I eat the first of the smoked links. I did have several distractions today and I'm not in the best mood. Still tending temps and they are hanging.. they smoking right now between 150-200 best I can. I went to Wal-Mart this morning and bought an electric single burner I installed in the bottom of the vertical that is holding first rack temp of 125. I'm going to bump smoke one more time and leave the electric on all night. I'm worn out; think I'll just buy my sausage uless this is off the charts.

9:06 photo, Pee-Paw is worn out. Put one more chunk of Hickory on. Holding steady at 175. The little single electric burner should keep it over 120 until daylight. I'll open the doors to the vertical at daylight and let them bloom unless one of you tells me that's a bad idea

Here they are this morning. It's about 38 here this morning so I opened the door to the vertical and let them air. About to vacuum seal.

Oh yeah, I myself was hoping to make some wild hog and venison sausage this winter. Haven't yet though, hopefully soon. Yours are looking good. What kind is it?

Dang, just now getting to the puter after a bad night but the looks of those sausage helped brighten the day.
Did you Smoke to Color, Feel or I.T. before pulling a vacc'n My late dear friend that was my Sausage King when I was hunting would always fry and small patty for me when ready to stuff in order to get the seasonings and heat like I like it.

I did fry a pttie last night, it was good. Smoked to IT of 158 and then let them hang in the cool East Texas air in the vertical. They were totally cold when packaged. i'm going to have one before 1 oclock I hope. I've got a guy here cruising my Timber so i can't do anything until he's gone.

When I lived in the Hill Country, I had a processor in Briggs, Texas that did all my sausage and he would make us some
Jalapeno and Cheese Summer Sausage that was the best I've ever had. I did all my other processing except the stuff with casings.

It delicious, juicy but not greasy. AND, it passed the " BITE" test.
