Spicy Chicken Smoked Sausage

Did an experimental run of some spicy chicken smoked sausage. Hanging for a bit to dry some before going in the Ole Hickory. That will happen later today, with more pictures to follow.

Well, pulled it from the smoker and found my temp probe failed. What was supposed to be 165 was really only 150. So to keep it an experiment, I packaged it up, and have it in the sous vide at 165 over night. I'll know in the morning.

So after the hiccup, 12 hours in the Sous Vide, and 24hrs. in the refrigerator, we have success. Very easy on the eyes, and even better on the belly.

Sous Vide for the save. Some people don’t like SV but it definitely has its place.
