Finished 60#’s of bacon and another 2 pancettas are in the process of losing weight. The belly was the best I’ve done. I’m happy with everything. The spicy bacon was Calabrian chili pepper paste based. It was very warm but it’s the first time that I got a spice to adhere to the meat and I could actually taste it. No additional layers after smoking was needed to get the flavor to come out.
