No shortage of local goat cheese here. Flavored, crumbled, block it makes no difference as Safeway, Kroger and of course Whole Foods have tons of the stuff. They have the Mexican cheeses too, but not as many.

Want to make it clear that in sausage you need a high heat cheese that won't melt. Cojita fits but I don't know which others do.

I tried these last week and they were delicious. I didn't change a thing. Perfect. Better than store bought. I can't wait to make them again.

Never been a fan of feta but wife insists feta to go in her risottos. I've come around. Yours look great.
