The wind was blowing pretty hard yesterday so instead of firing up the pit I decided to cook some catfish in the oven. Never done this before so I decided to give it a try and fry the catfish in the oven. Rolled the fish in an egg wash, corn meal mix and baked at 425 for about 20-25 minutes and I tell you that they turned out pretty dang good, served along side leftover jambalaya. I'm thinking that there may be some fish taco's for lunch today.
