Pozole and cornbread

Used this stuff for the pozole

Put 3 pounds of pork shoulder on with some pecan for smoke for a couple hours at 250 - just wanted a little smoke

Cubed the pork
Image

Everything in the pot for a long low simmer

Cornbread on the XL
Image

Bowl of pozole with traditional garnish, radish, cabbage, avocado, and cilantro with cornbread on the side

Cornbread does look great, and I am big big fan of the posole. Ground up it makes nice grits too.

EH Muy Bueno amigo! One of my favorites along with Chile Verde.

And don't forget the flat red chile enchiladas. My wife is from El Paso, and that's what she cooked me the first she had me over to her place for dinner when we started dating. Pretty much sealed the deal right there.

In truth there was the thing about her looking like a shorter version of Sophia Loren. I married "up" fer sure.
