Mise en place
2/3 cup flour
2/3 cup canola oil
Smothered okra
2# shrimp
Green onions and celery
Shrimp stock from shrimp peelings
Starting the roux - CI directly on lump
Five minutes later
Cooked the seasoning down then added the smothered okra, stock, and a little later the shrimp
Cooked some brown rice with the shrimp stock on the egg - came out tasty but a little crunchy.
Sample bowl (just a small one ) to see if flavor needed adjusting - it's a tough job but someone has to do it. Couple shakes of Tabasco was all it needed.
