it's gittin that time of year and i'm gonna start early. i got a 15 lb. pork shoulder that will go on the smoker wednesday morning. of course the downside is there might not be any left by christmas. anybody else gonna make some?

Rat, those Tamales are a lot of work, too much for me. I just buy mine from the Mexican store (hand made really good). And much cheaper than making my own.
I have a friend in San Diego, Texas that makes and sell Tamales. He said him and his wife make 150 doz. week. I think they sell them at some kind of trade day thing. Hope you have fun making them and more fun eating them.CF

There is a Mexican church in our community and they had a garage sale a couple weeks ago and sold tamales there. Man were they gooooood. They had chicken and pork, spicy and mild. The ones they said were green chili and too spicy for human consumption I thought were good and the red chili ones they said were mild enough for the kids seriously needed an ice cream chaser. But they were all the best tamales I've ever had.
I need to try making my own I've got some frozen PP.
BTW all the spicy ones were wrapped in banana leaves instead of corn husks.

Well sounds like you struck gold there Papa. Tell ya I made some a couple of years back and they are way..way..way...way too much work for fat lazy gringoes to mess with. Took me 3 hard day of pure manuel labor to make them crazy thangs and they wasnt near as good as you can buy off the 12 year old fat kid who peddles them in all the beer joints over on NE 28th St. Course they may be tamales el gato or el que pierro but they got a good flavor. Old chum of mine took his Veternarian buddy down to one of them hick towns down way South..Freer...Falfurrias..blah blah blah. Anyway the Vet say he had the best tamales he ever ate..but he either find a dawg or Coyote toenail in one of his. Being a Vet the boy know whut a dog toe nail looks like...it just hard to tell it from Coyote since they is such close kinfolks so to speak. Aint no need to buy the Masa Trijo if you want flour taurplians. I got a recipe (if you can call flour..salt..water..and Crisco a recipe:) using the dough setting on a bread moochine which will make you think a muy coola mamacita been kneading them thangs all day.

I love making tamales, but it is a LOT of work. I take shortcuts in that masa mixin stuff. HEB carries a premixed that is really good and cheap. It is in the fridge section, usually around the meats.
I usually make mine from leftover bbq... I like to add a little of my rub in with the masa mix to give it a little more flavor leaning over to complement the meat.
