Old Blind Hawg Tacos

Please let me say that the "success" of the Tacos that I just made and ate was TOTALLY ACCIDENTAL. While waiting for the Pork Ribs to finish their wrapped time, I got hungry and decided to see what I could do with the end trimming from the two racks.

Basically I took the trimmings, malletized them while thinking of my first Oil Company Supervisor, sliced thin cross grain, sauteed with thin sliced jalapenos, white onion, cilantro, salt and pepper then piled on a Guerrero white corn tort with some sour cream, pico and pepper jack chez. Only negative was I had to use both hands and both feet to get it from the plate to my mouth.
