Fried Quail Breast and Skillet Gravy

OK so I fibbed a little when I said that I would only fix these quail breasts as Grilled Diablos.

Due to Circumference Stances beyond my control and the Quail needed cooking or chunking, I used some Buttermilk, Flour, Rice and Green Beans and made us a Lunch today.

No Regrets at all. :tup: :chef:

OUP, you are so reminding me of my dad's mom, 'Uma'
she and my granddad owned a drilling company and started out in the Burkburnett field in 1919
she was the cook for the crew
my uncle was born in the superintendent's shack in the middle of the field in 1920
my dad was born in Electra when they were drilling there
she cooked in cast iron, on a cast iron wood stove that they moved on a mule drawn wagon every time they moved the drilling camp

when i was a kid, and they had sold their company, and were retired, i would stay with them all the time
my granddad was a riflesmith and serious hunter when he retired
my grandmother would cook everything we killed in her castiron, on the stove, or in her dutch ovens
possum, coon, squirrel, rabbit, all kinds of bird, chicken fried steak, etc
and EVERYTHING got marinated in buttermilk before it got to the skillet or dutch oven
and there was ALWAYS skillet gravy

in the boom years of the north Texas oil towns she would have to dress up like a hand/roughneck
to go into town so she didn't get molested as a pretty girl

Awwww Man,, WHAT A GREAT STORY - - - - thanks so much for sharing - - - she's a "looker" and regardless of the disguise, she sheds beauty over that field of derricks - - - what a choice pic for you to have :tup: :salut:

Great story Capt.

My Grandmother used to cook for the crew at the ranch before any of their kids were born. When I was a kid we lived with my grandparents for a while. My Grandpa worked nights at the plant in Longview. When he'd get off she'd fix the big meal. Chicken fried steak and eggs was her specialty back then.…still my favorite meal anytime of day. I blame her for me not being able to even think about eating a bowl of cereal for breakfast. I'd just as soon skip :)

'Uma' MADE all of us eat a big bowl of oatmeal every morning w/ honey
she knew we had to get some kind of fiber everyday
or we'd be plugged up like a cork from all the rest of what she cooked for us
steak, eggs, bacon we're Saturday breakfast
then a big Sunday dinner about 2pm after church (or huntin' ;)
we mostly coon hunted, so it was all at night / early morning before dawn
