Rainy Day Breakfast

Had some leftover corned beef in the fridge, a package of breakfast potatoes with peppers and onions…add some eggs and we got corned beef hash. Oh, I added some of Gators Cajun Seasoning because I like the heat! Wound up putting some Louisiana Hot Sauce on mine as well.

Planned to use the Blackstone but due to rain I had to break out my Lodge gear. Too much for one pan and wife is very protective of her gravy cast iron pan (beautifully seasoned piece from her Grandmother) so I went with one helping in Cast Iron and the other in my Lodge Steel Pan and mixed them together.

Good vittles!

Looks great right there !!

Something about topping home fries with eggs directly on top !
Doesn't get any better than that.
