I'm usually a ribeye guy but Costco has a 4 pack of strips and two of the strips had great marbling. Perfect for me and the wife and kids could eat the lean. So I fired up the Oak lump (currently out of Mesquite).
Also grabbed some stuffed hot hatch peppers at the store along with a case of roasted. If you haven't heard, this years hot hatch bring the heat! Wifey likes spicy and she went for the milk…I washed mine down with a hatch / tomatillo beer cuz that's how I roll :)
Also stuffed some diced hatch in the tater and grabbed a hatch pound cake for dessert. 'Tis the Hatch Season!

Re: Steak Night
Nicely cooked, I like mine a bit more blue, but I'd wolf that down.

Re: Steak Night
Is that a herb butter on the steak? I sometimes serve mine with a knob of garlic butter on mine.

Re: Steak Night
Looks tasty. I have to second Russ's question tho. What is the herb butter?

Re: Steak Night
Thanks y'all. It was Kerrygold garlic & herb butter. Just happened to see it at Fischer's Market in Muenster a couple weeks back and grabbed it. Good stuff!

No doubt. I'd love to hear a pepper expert explain what made the difference.
