I don't always make it, but this year had some paper mini loaf pans (whyyyyyy did I buy those?) that I wanted to get rid of. No neon fruit, ever. Add-ins this year were dates, plums, pineapple, tricolor raisins, walnuts, pecans, and orange peel I candied myself. And brandy. :mrgreen:

Not a Fruit Cake Fan, HOWEVER, I'll take the top off of two of'em with Peekans and yes, put some butter on those if you will :tup:

My favorite way to eat it is with a slice of sharp cheddar and a cup of strong coffee. But if you want butter on yours, okay! :lol:

Oh, and the one with walnuts and parchment is to distinguish it for my cuz, who doesn't want extra brandy in his.

I like butter as well, then over a hot flat top for a little crust !

About to finally attempt homemade Spotted Dick.
It's along the line of a fruitcake, had it once it was really good..

I haven't set on just one yet.
I've seen different variations, some are more like steamed pudding or bread pudding recipes.
Others are more like a more dense fruitcake recipe.

I've had it once from a Wegmans store up here, it was really good.

Yup, you heard it right lol.
A guy from work came in one day about 3 years ago and asked me if I wanted to try some. He had something that resembled a friutcake in this container.
Naturally, I was expecting a joke regarding Anything I answered with but he began to tell me it's big with the Brits and he found it in isle 8 at Wegmans down the road.

I didn't believe it was truly named that, so after work I ran there to see for myself....
Sure enough, Spotted Dick was right there on the shelf lol...

OUP, this is the one I use, with variations in amounts and kind of fruit, and I soak the fruit in likker first. Add more when cake is just out of oven.


> 1/2 cup butter (rm temp) or 1/2 cup shortening (rm temp)
> 1 cup dark brown sugar, firmly packed
> 1 teaspoon vanilla or almond extract
> 2 large eggs
> 1/2 cup molasses
> 2 cups all-purpose flour
> 1/2 teaspoon baking soda
> 1 teaspoon cinnamon
> 1/2 teaspoon allspice
> 1/2 teaspoon mace
> 1/4 teaspoon ground cloves
> 1/2 teaspoon salt
> 1/2 cup milk
> 1/2 cup small pieces candied citron peel (or candied pineapple)
> 1 cup chopped dates (or use raisins)
> 1 cup chopped pecan
> 1/2 c ch. walnuts

Directions:

Set oven to 325 degrees F.

Butter two 9 x 5-inch loaf pans. Or giant muffin tins.

Line the pans with foil, then butter the foil. Or parchment. Or skip.

Cream the butter or shortening.

Add in brown sugar; beat until light.

Add in extract and eggs and beat well.

Stir in molasses and blend to combine.

In a small bowl combine the flour with baking soda, cinnamon, allspice, mace, cloves and salt; beat into the creamed mixture until combined.

Add in milk; beat until combined.

Stir in the fruit, dates or raisins and nuts; mix well.

Transfer/divide the batter between the two pans.

Bake for 1 to 1-1/4 hours or until the loaves test done. (Or 30-40 minutes for smaller pans or muffin tins.)

I would and will use that Recipe also EXCEPT I will leave out the candied fruit, dates and shriveled grapes. My love for fruit is right off of the tree or vine but after it's messed with/candied/etc "I'm Out" :dont:
