Hey Pard, as mentioned before adding corn starch OR even baking powder for extra crispyness is a pretty wise move for Suthern Fried Sheeken

soak in BM. remove. salt and pepper chicken; add salt and pepper to flour, mix. roll chicken in flour, shake, add an egg to the BM and stir. Dip chicken in BM again and then back in flour; shake it.
Add Crisco shortening in cast iron skillet to 3/8" deep. Get it gently rolling and place chicken in skillet easily. Cover skillet with lid and cook for about 5 minutes on each side or until golden.
The Crisco and the lid are very important. Finish it off with some white sop gravy and mashed potatoes

Thanks for tips Rambo, all taken aboard. I got an e mail this morning from the hotel where we ate, the chef wouldn't give amounts but I think I can work it out. I was surprised but not when I think about it, there was mustard powder in the mix. I'm going to do this next week as I have dinner sorted for my family tonight.

+2 cents, a salt and beer brine, then dripped dry before a buttermilk dunk and dredging, also works.
You can also dunk in a thick beer batter and then drop in the hot stuff, a bit like fish n chippies battering effect.

Yup, Dry Mustard can be used alot when frying, especially for dishes like Mac n Cheese or those with alot of dry ingredients.

Russ a tidbit of info for you about mustard powder, it loses it's pungency when cooked.....

put a smidgen of cayenne powder in that flour, say 1/8 teaspoon per cup of flour, and if you use regular flour, add a 1/2 teaspoon of baking powder per cup of flour, the bakin powder will cause the flour to fluff when the buttermilk hits making your breading lighter and more crispy, and the cayenne, well that will just give it some zip...
