"OUP" and his tilapia gave me a craven for fish. The tilapia soaked in milk and cajun seasoning most of the day, rolled in a mix of flour, cornmeal, panko, cajun seasoning, then oven fried (baked) at 425 for about half an hour and served over a bed of Uncle Ben's rice pilaf. Topped it off with pico and a dip'in sauce (ketchup, tartar sauce, SB chipotle pepper sauce), turned out pretty dang good. Decided to have some corn on the cop also, it was boiled for about 10 minutes in water, milk, stick of butter and cajun seasoning. It was all served on the good china.

We haven't had a fish night in a while and I'm really thinking it's time! This looks fantastic!
