As a gringo my takeaway is a chalupa is kind of like an open faced quesadilla

Up here in Yankyland they are known as something close to Mexican Pizzas, ( yes, that's the Real advertised name to this day ). When I was a teenager we would hit Taco Bell and pound a few of these down with some ( Jolt ) soda about midnight...

The spicy chicken I had recently was served on refried beans, and I must say, I like it. Havnt looked into where or how I can get it yet, but I will be working on it. Also restaurant I was at a few days ago had a refried beans dip, I should have tried it.
