We love tacos here at home. Heck, who doesn't?! This particular taco holds second next to Barbacoa for the wife. Potato, bacon, onion, seasoned with some chili powder, paprika, cumin, oregano, salt, pepper. Add a little chicken stock to help make the taters tender, then top with cheese! Served on homemade flour tortillas and topped with some chives and additional chopped onion (for some crunch).

We were destined for tacos this morning, it was going to be some beef cheek but I totally spaced it last night and forgot to start it before bed . Sigh.. Guess it'll be lunch now!

I like them with eggs. This is also great with some rancheros sauce!

I finally got a decent shot from my phone. Lol! I've been meaning to grab some Tx Pete but have been unlucky as of late. Seems I'm not the only one to like the stuff and Wal-Mart is the only place I've been able to find it.. Sigh..
That's exactly the amount this batch made. Lol!!
I work on my refried beans whenever I have any beans left to make them. Last 2 batches of pintos I made were just demolished and there was nothing left. I blame Sucklebusters!! Lol!
