Seafood & Cornbread

How about bought. :cheers: Been fighting the crud (a cold) :whiteflag: all weekend so I just stayed in and watched NASCAR and NHRA on the tube and thinking what would be good to eat. I didn't feel like going to the store so I looked around the kitchen to see what there was and I had everything I needed for Seafood Cornbread, my wife loves this stuff, I got to say this stuff is pretty dang good but I like to put a little SB Cajun Pepper Sauce on mine. I don't know if it's the seafood cornbread or the pepper sauce but I feel a whole lot better this morning and I hope I stay this way. :salut:

Lawdy Mercy, if you think you're gonna get away without a recipe of some kind then think again - - that looks awesome :tup: :salut: :cheers: - - - however it's hard for me to look at because I started a clear liquid diet that lasts until noon tomorrow - - - I must be some kind of a masochist to put myself through this. :banghead: :banghead: :banghead:

Sounds to me that you are going to see the doctor tomorrow. I'll post up the recipe later.

Parts - good luck at the Doc and I hope your appointment comes quickly so you can get some food in you!

Seafood Cornbread
1 lb of crawfish tail meat, I use shrimp and crab meat instead. I use the tiny shrimp in a can sometimes and the lump crab meat in a can, 2 or 3 cans each, drained. I think the cans are around 4 oz. or so each.
1 box Jiffy Cornbread mix
2 eggs
2 cups shredded cheese (whatever kind you like)
1 can cream style corn
1 Tbs baking soda
1 Tbs Tony’s seasoning or any Cajun seasoning.
1 stick butter or margarine (melted)
1 handfull of each: onions, bell peppers, green onions, I use to use Bird’s Eye Seasoning Vegetables in the frozen food section when I can find it but lately I’ve been using Kroger brand Cajun Style MIREPOIX Blend, the whole bag, it’s in the frozen section also. I let them thaw out a little before using.
1-2 fresh jalepenos chopped or a 4 oz. can of diced green chiles (optional)
Mix all together and bake at 350 for 45 min. or so. I use a 9 X 13 pan, greased or sprayed with Pam.

thanks from me also - - - I just picked up some of the ingredients but I was in Walmart and so was most of the residents of Montgomery County, so it seemed. I think I'll wait and go to HEB later for the rest of the stuff. :salut:

Spectacular dish, WillieP. We'll probably try this someday...I just wish we could get half the 'stuff' you can (mirepoix mix...oooo!)

I'm picky with cornbread, but it's looks like a Hummdinger for sure !!
