They are essentially a chimichanga version of my potato, bacon, and cheese tacos.
Filling
Tortilla in the making!
Rolled out by hand. Nearing nice and round, but still not quite perfect!
Don't forget the cheese!!
Now all packaged and ready to fry. Shallow fried at about 350 deg, 2-3 min or so per side.
And done! Topped them with siracha (left), and guacamole/cilantro salsa (right).
I love a good chimi for sure!
