We were inspired by a BBQ Pit Boys video, where they made a breakfast sandwich, using a lot of grilled sausage and peppers, etc. We decided to do ours indoors and just use cut-up breakfast sausage links, cooked with bacon, peppers and onyuns. Then came a couple of scrambled eggs and some cheese. When we saw how much food was in the pan we realized that the Pit Boys used extra-large muffins. So we had it as a "deconstructed" sandwich, with our smaller english muffins.
We remembered to take a picture before it was all gone:

Re: Sunday Breakfast
Any time a breakfast sandwich is described with “a lot of grilled sausage “ it is a very good thing. Excellent breakfast.
Did you shake your hands and move your mouth w/o using any real words while you described it? Sorry, that’s a joke at BBQ pit boys expense. They really do some good stuff.

A breakfast to be proud Of! I'm also particularly fond of English muffins.
