Re: I needed a snack
Ok, I love cornbread and creamed corn, I make corn fritters, so would I just substitute the plain flour for the cornflour. And add bacon n onion as I normally do. ??

that would work
i keep bacon grease so i put a teaspoon in the skillet, on the stove to melt & heat up, while the oven heats up and i make the batter
i pour any excess bacon grease into the batter and stir it in just before i pour the batter in the skillet
the sizzle tells you you're getting a bottom crust
i also add a teaspoon of salt
and have thought about adding 1/4 cup of flower and 1/4 teaspoon of baking powder to my mix to give it a little more volume, make it a little drier and cakey
