Thanks! It's made in a whip creamer. Nifty little CO2 foamer. 50/50 siracha and heavy cream.

Thanks all! This is one of the items on the menu at the new place. It's a pub with fresh food options. Plates are modest, sharable portions and great prices. All food is made from scratch and we source a lot of items locally. Sliders, flatbreads, mini steak kabobs, all using local ingredients.

The beef we use is American Kobe from a local rancher. They are Angus/Wagyu cross. I'll post some pics of the sirloin we use for the steak skewers; they are marbled VERY well for sirloin.
Flatbreads, tortillas, cakes, all made in house from scratch. I've probably made about 2000 tortillas in the last month. Lol.

This foam actually looks good! Whenever I see them use foam on a cooking show, it looks like what the cat spits up prior to a hairball.

I must been in Arkieville when you posted this, my Chef Pal, but let me just say that "if any taco is too purdy to eat, then those are just that" - - however, I'd would just close my eyes and ask the harmonica player to play Taps with a Tejano Beat. HEY, I sure wanted to swing by last week but there were just too many folks and vehicles to pull it off this time - - - hopefully later. :tup: :salut:

I'm sure we'll still be here! We get slammed Thurs through Sat, wed is usually up in the air. Between 4 and 7 pm last night, we did 135 plates. Rush ended by 7:30 and we were near empty. Kitchen shuts down at 9 and we had a small second wave come at 8:35. Lol! 14 late arrivals. Friday nights, there's normally a wait to get seated by 6pm. And Saturdays, we have live entertainment. If you're not there in a seat by 7pm, chances are you're not getting in. The bar generally sees more sales on Sat, but our average run is 180-200 plates by shutdown.

Not to rules lawyer or anything but since the meat is brisket, I think they DO count as BBQ though. :mrgreen:
Either way, I'd scarf down a plate. I loves me some Tex-Mex cooking.
