Rouladen mit Spätzle und Blaukraut
Due to the bad winterweather yesterday i cooked something inside. A original german dish, which i like very much, as well as my thai wife like it too.

This Mississippi boy would tear that plate up not knowing what it is or what its called. Are you willing to explain this dish please. What is all that. It looks delicious! I can't wait to see more.

Oh my Buddha, this is hard work
Rouladen is Beef, plated, and rolled with a filling. This filling u can variate what u like. The original way is plate the thin sliced beef until u can read a newspaper through it
Then u season it with S&P, mustard and Paprika and stuff it with Picles and Bacon. With that make some rolls
On the side u prepare the "Spätzle". Is a kind of noodles.
You have to mix 500gr Flower with 6 eggs and maybe 100ml Water. Mix it, until it is bladdering. Them u put it into boiling water until it comes to the surface. (Maybe 2 Min). Later u put this into a pan with some butter and roast it.
For the beef u have to prepare a sauce basis, roast the rolls and then put into a closed pot for 2 or 3 hours
If u finished this all, u can eat

Looks very good to me.
Since I am of German heritage I grew up with and love spatzle but the rouladen is new to me although I knew what it is I have never had it, looks good.
GG Grandfather left Bavaria in 1722 so some things may have been lost along the way.

This is a thing that i love very much of Amerika. U have ur own history which is based on a lot of other histories. Where was ur grandfather from?

I believe it was Mainz but that is possibly just his point of departure paperwork. Family went from there to Kamenka Russia then in 1874 & 1878 to US.
My father spoke fluent German but it was the German of early 18th century so not entirely compatible with modern German but the locals in our home town all spoke that dialect.
Unfortunately because of the world wars he would not teach us kids the language and possibly so we wouldn't know what he was saying when he cussed us out......

Sure i can do. This is also a normal german dish. But there are two different versions between eastern and western germany. They both taste very good.
When the asparagus version starts, i will do some dish with Wiener Schnitzel.

Both my wife and I are part German. She makes rouladen every Christmas eve. Not as good as her Grandmother's but still really good. Your's however look better than both their's.
