Enchiladas Verde

So I tried to come up with something different to do with my leftover Easter turkey (which is still quite moist). After a quick recipe search for ideas online, I came up with doing some chicken enchiladas with salsa verde using turkey instead of chicken.
Here's the final result after assembling, then baking in the oven for a half hour:
They turned out great. I just wish I had used a bit more hatch chili sauce.
