Stuffed bell peppers
I tried my hand at stuffed bell peppers last night and I really liked them! The only thing I will do different next time will be to roast the peppers first and maybe do them on the grill. I cooked the hamburger meat with fajita seasoning then mixed in salsa and enough cheddar cheese to choke a donkey! Stuffed the peppers and put them in the oven in a foil covered casserole dish. After the cook I topped them with mote cheese and sour cream. I can't wait to do them again.

Nice work!
Roasting them prior to stuffing is worth the extra step. Using roasted poblano peppers takes it even a bit further.....especially if you're using taco meat. Mix in some pico de gallo and some monterrey jack with the meat.
