I’d eat that in a heart beat. My wife makes a dish like that called confetti spaghetti. I love it with green tabasco.

PS - hope our neighbors from the north still talk to us after they see what we do to spaghetti :)

Forgive us WV, PB, Sailor and anybody else I might’ve missed.

Yesterday the Wiffy asked me "Isn't that just spaghetti with enchilada sauce on it ?" :laughing7: :lol: :D
I replied "not at all, it's also got Louisiana Red Sauce on it also " :dont: :roll:

Looks great to me. :D

Yeah, technically it is "just spaghetti with enchilada sauce" but it's amazing how a change like that can completely change and elevate the flavor profile of a dish. First time I ever had chili spaghetti, I was completely blown away. I love experimenting with variations on the dish like this.
