Cold smoked salmon dip

Cold smoked salmon dip

Brined for 3 days.

For two slabs (filets) of salmon I use +/-

1/2 cup kosher salt
1 cup brown sugar
2 Tbs fresh ground black pepper
A bunch of dill - I use a full pack from the store for each filet. You may have enough in your yard. Don’t skimp on the dill - more is no betta.

Check the salmon for “pin bones” and remove if you find any. I have a small pair of needle nose pliers that are only used for removing pin bones in salmon. I often get filets with no pin bones.

Mix up the salt, sugar and pepper. Put about 1/3 of the mixture in a shallow pan and put the salmon in skin down. Put the rest of the mixture on the meat side. Put the chopped dill on the salmon.

Cover with clear wrap then add another smaller pan and put some weight on it and place in fridge.

Skin down for one day and skin up for two days.

Rinse well and then rinse some more. Soak it in cold water for about 30 minutes, drain and repeat.

Pat dry, then back to the fridge uncovered for an hour or two to further dry. It’s ready to eat as is or you can smoke.

Cold smoke for an hour or so.

Chop and combine with boiled egg, onion, capers, and sour cream. Voila!!

Just had a very close version of this at a wedding in Delaware !
Big hit, I couldn't retreat from the table it was on !!
Looks great, eventually I'll give it a go !

Hi Sailor - cold smoking with the A-maze-n tube is so easy. It’s real handy for smoking cheese.
