Sunshine inspired Omelette

Sunshine inspired Omelette
So I looked out this morning and saw this strange bright object peeking at me thru the clouds!
I searched it on BING and found out it's called the "Sun"....
Ok, sarcasm aside, I grabbed some Eggs,Heavy Cream,Milk,Fiesta Blend Cheese,some Cooper slices,Double Smoked Deli Ham,Breakfast Sausages and Bacon from the other night that was left over.
Sliced up some Naked Taters, hit them with an Italian Seasoning Blend and some Evoo and on the Black Stone they went.
By far, my favorite way to do Home Fries and the flavor was amazing with just that one seasoning.
Flipped the Omelette layers and called it a successful morning :):)

I've just had crumpets and a cup of tea, man that would be great to finish with. I was going to make an omelette this morning but the wife forgot ingredients, nuts. You have the folding down pat, mine normally falls apart.

Closest I was to that was owning/running a Sabrett Stand at a College in North Jersey for 4 years.
Now with a young son, I could never do that again but it's a trade off I will always be happy with :)

I'm not sure if there is any truth to this, but ever since I've tried it I've had great success with folding Omlettes.
An old neighbor told me years ago to mix some Heavy Cream in the eggs before beating them. I've always used Milk with Eggs but never Heavy Cream until recently and I must say that there might be something to it ?
This Omelette had both Milk and Heavy Cream so maybe it's the secret trick, IDK ??
