Curious if you guys ever made them? Like pancakes but cornbread base and you throw corn and jalapeños in it and cook top it.

My Mom used to make something like that and she called them Corn Fritters :dont: :cheers:

Wife just made her version 2 days ago!

I have always made mine the easy way, 1 box of Jiffy, 1 can of cream style corn, 1 egg, and enough liquid to make it a pourable batter. Usually used milk at home, a little beer at the deer lease! And they make great insulators over your eggs outside at the deer lease!

My wife's version is closer to her Mom's 'Gorditas de Elote' in Mexico. Her Mom's is fresh corn kernels and scraping the cobs, then cooking the patties. My wife uses my base recipe, but uses 2 cans of creamed corn and adds a touch of cinnamon.

Mine cook up like fluffy pancakes where my wife's are a bit heavier/moister. All go great with a big hot cup o'Joe.

Still been meaning to make some with japs & onions for a savory version...

That's getting close to a hush puppy and although it sounds great, I don't want that with my coffee.

I agree, not with japs and onions, but I haven't made those yet! Using Jiffy mix which is slightly sweet and a touch of cinnamon goes great with coffee.
