Big Easy Stuffed Salmon

Big Easy Stuffed Salmon
Lorry Lordy Lordy is what comes to mind !
I Still have not found 1 single thing that this Oil Less Fryer can not cook to my absolute amazement !
Stuffed some Atlantic Salmon, 1.5 lbs and 1.8 lb pieces with some Fresh Basil and Sage, chopped up. Whole Baby Spinach,Diced Roma Maters and Fresh Chunked Garlic. Sauteed all of that in the Cast Iron and then added some Feta Cheese and Grated Parmesan Cheese.
Mixed it all together and piled it between the butterflied Salmon pieces.
Salt & Pepper, Rosemary and Tyme and Italian Seasoning.
Folded it back and S&P on top then stacked in the Big Easy.
Crisper lid on, gas on full and walked away for 10 minutes.
Took the basket out and basted the top of each piece with melted Butter and back in for another 15 minutes.
Took the basket out and sprinkled some Feta and Grated Parmesan on the top, drizzled more Melted Butter and back in for another 5 minutes.
All I can say is that I've cooked Salmon multiple ways before and this is hands down the absolute best we've ever had !
Perfectly cooked, moist as any type of fish we've ever eaten and the flakeyness was Spot On !
Not a dry bite to be found, man I Love this thing :):)

Man I wish I loved salmon, you do it justice. If I was a salmon I want you to do me justice with your cook. Beautiful pics as well.

I never have and never will try the " raw salmon " thing.
If you were a salmon, I'd probably check for ur New Zealand accent after I hooked you. If I hear one, I'd let you go to live another day lol

I mixed some info from the web along with the ingredients I usually use with fish.

Its funny, i presently have my Mom, 3 sisters, and 2 brothers up in Maine ripping thru some seafood like a hot knife thru warm butter.
My one bro saw the Salmon here and called me the next day asking for the specifics.
Then he said he's en route to a Wal-Mart parking lot to meet someone selling a almost new Big Easy he found on Let-Go for 40 $ Looks like it was used once, not even seasoned yet.
He's killing me, lol what a steal. Only used one time,and not sure why she's selling it but now he's got one for dirt cheap.
Looks like Salmon on the plate up North today :)

I'd eat Salmon 3 days a week if I could pull it off but I'm really picky about how its cooked, one of the reasons it hasn't been something on the usual rotation.
I've Finaly found a way that the wifey likes it so its a win win for me :)
