Deep dish pizza in a cast iron skillet

Postby Copasspupil » Wed Sep 26, 2018 7:00 pm

Tried a cast iron skillet this time and I thought it turned out well. Spicy chicken, caramelized onions, roasted red peppers and garden tomatoes with theee cheeses as well. I couldn’t find my deep dish pans so I used the skillet.

Nice! Good lookin pie. Been there done that too, works great. Did an event last year fer 30, was told in advance we had “one vegeternarian” coming. What to do what to do... ahah! Just do veggie pizza in a skillet and shove it off in the firebox right there toward the end.

Surely a plan conceived by a genius (me) to be executed by an idiot (me again).

So after cooking my butt off fer 30 fer about 24 hours, there I am loading up the skillet fer ‘ol No. 31. Greased the pan w butter (yeah I cheated slightly in the name of its-just-done-that-way), laid in that fresh dough, then loaded her up w sauce, crushed garlic, purple onyon, mushrooms, and all kinds of roasted peppers. Then shoved it off into the firebox on ‘ol Rosebud, sat down, opened a cerveza, and got off into a conversation. Most beautificant smell ever came seepin outta that firebox. Time marched on, musta been 8 or 10 minutes, so I amble over and cracked open the door. Most wonderful pizza I ever slaw is starin back at me, just a piece of art, coulda hung it on the wall and saluted it daily and twice on Sunday. I pulled it out to cool a bit, then sliced it up like pieces of eight from a Spanish coin. Gorgeous. Then brought everything in to serve, went looking fer Ms Vegetarian to serve her the blue plate special personally, like the Academy Awards, and to demonstrate I hold no grudge against the meatless minority. It’s a free country. People can go be a vegetenarian if they want, or drive an old Nash Rambler w no air conditioning if they want, or smear themselves with chicken broth and go running through a dog pound if they want, I don’t mind. Live and let live.

And, you guessed it, the ungrateful wench never showed up. Musta been bingo night over to the Jane Austen Tea Room. I was passing sore about that. Couple hours burned doing a special request, and the requestor gives me the Heisman. Bad form.

What to do, what to do.

So I thought hard. It hurt my head. No pain, no gain. Eureka! A solution: I always keep a spare package of Opa’s Jalapeño Sausage handy in my back pocket or someplace handy. I seared it, sliced it, and loaded it on then stuck it back in the firebox fer 2 minutes. Unbelievable. Quite possibly the best pizza I ever had.

Right after I sat down and ate that whole pizza, I forgave Ms Vegeternarian. Live and let live after all.

Excellent pie Copass - grilled pie is outstanding and that one is purty.

Boots - the old saying of “if you go vegetarian for one night, you will never go ....”. Whoops - had a “rocket surgery” moment and got my quotes crossed.

Beautiful! :salut: We've used the CI skillet for pan pizza, too. It's a natural.

When I was reading about it, they suggested to preheat the skillet and I was concerned it would burn the bottom. I did like the consistency of the crust. They finished it so it turned out well

The Pizza looks great and mouthwatering  :chef: :rose:

The only thing I´m fighting with is the green sauce. A Pizza has to b red or white, but green I never saw before. But for sure, I would not stop until all your Pizzas are gone :D

That is a really good looking pie. Wanted to give the CI pizza a shot for a while now.

No green sauce here. It’s basil on top

I love a deep dish in cast iron. My only complaint is that I don't have a skillet big enough to accommodate all the pizza junkies here. Lol! That looks awesome!
