Gumbo prep - smothered okra

It’s gumbo time in South Texas and my smothered okra stash is dwindling so here we Geaux.

6 pounds okra
12 Roma tomatoes
3 onions
1 head of garlic

Chop all ingredients, combine and put in the smoke for an hour or so. Adds just a hint of smoke to your gumbo. Can skip this if you don’t want a little smoke in your gumbo.

Then into a roaster (or covered aluminum pan) and into a 350 oven for about three hours, stirring every 30 minutes or so. After a couple hours, I use a large slotted spoon and crush the okra with the back of the spoon. If you use a roaster instead of an aluminum pan, you can put it on the stove on low instead of in the oven.

Finally, vacuum pack and freeze for later use in your gumbeaux.

Vacuum packed and into the freezer - this lot will be used in 6-7 gumbos. :D
