Tamales coming soon!!
2 days stewing this pork shoulder in the awesome red sauce I've whipped up for the ol' tamales. I wish I could upload taste and smell to go along with the pic because the pic alone does no justice. Stay tuned!!

FYI.. I didn't mention the composition of the sauce.. It is guajillo, ancho, and chipotle peppers, blended with garlic, cumin, salt, onion powder, and ACV in the proper proportions. For the meat, I slow boiled (If you're reading, Russ: this is the only time it's acceptable to boil pork) with a spice blend of cumin, chili powder, paprika, garlic, onion, and Mexican oregano.

Pork, sir! This is a shoulder from one of the pigs I just recently got from my brother. I did a kinda botched process thread in general discussion. Lol.
Side note: Only a brother's love would drive me 500 miles to pay a hundred bucks to take his leftover stock that didn't sell.

Looks awesome, Gents - - - - I made them once and they were terrific but way too much work so now I look for the little ol Ladies on the side of the road this time of year.

Oh yeah, we made Pork, Pork with Jalapeno, Chicken, Bean and Jalapeno, and even a few Brisket tamales. "Brisket ones were dry though"

Soooo.. I botched this batch really bad. I've been waiting for over 2 months for a prescription for my daughter and they called me yesterday and said it was ready. Without thinking, I turned the stove off and made the 2 hour trip to go get it. Was sick for some unknown reason on the way back home yesterday and ended up not messing with the meat until this morning. It had been out most of the day yesterday and all night, no heat. I'm not in to taking chances so to the dogs it went.

I dont feed my dog anything I would not eat, I am not real smart about that, what dogs can and cannot eat with out getting sick...

I hear ya. It went out to the strays. I take scraps and such down to the end of the street for them. Honestly, I don't know if they're technically stray, but they do roam around freely.
I myself wouldn't have had problems devouring this, but I have a cast iron stomach too. Lol. I was honestly "playing it safe" because I had the flexibility to do so. In all reality, it would have been okay as it was only at room temp for about 9 hours total time before I had gotten to it. Being that I was still not feeling 100% and had no room in the fridge to store it at the time, I just 86'd it out of sheer "I don't feel like effing with this right now"
