Couldn't resist this so tried my own for the first time. Fried in canola oil. Added mashed potatoes, fried onions and even a few jalapeno's! All in a potato Cake. Made a few to the kids too. They loved them. My wife is more health conscious so she would have them ordinary pan fried.
