Collard Greens Trial Run

Collard Greens Trial Run
So, I'm not sure what I was supposed to expect from making these. Emm ( OUP ) hooked me up from what I can tell. First time ever doing these and I was shocked at the amount of flavor the green leaf produced. First I cubed up some Thick Triple Smoked Bacon and fried it up with some Sweet Vadilla Onions and Fresh Minced Garlic.
Added the Collards and S&P, Pepper Flakes, a Smoked Ham Hoc and Chicken Stock and simmered for just under 2 hrs.
Between the Bacon and Hoc, you would swear it was cooked outside in the smoker.
Ill definitely make these again, thanks for your input my friend

I was like a fish out of water when it came to making these, usually I don't stress over food but last night was testing for me.

They were good, I'll have to have it in moderation tho.. Very strong flavors for sure.

Picked up 2 beautiful bunches of Collards today and am thawing the Christmas Ham Bone leftover instead of the smoked ham hock this time.
