Tex-Mex Stuffed Green Peppers

Tex-Mex Stuffed Green Peppers
I ran across this recipe and tried it last night. Didn't closely follow the directions and cut the pepper across the top like I normally would, when the recipe called for them to be cut in half top to bottom. Still turned out great, but I'd cut back a notch on the taco seasoning as it was a little overpowering. Wife thought it was amazing.
