I had some large shrimp leftover from a couple of night's ago so I decided on quesadilla's yesterday evening. I'm going to have a little fun here and do step by step instruction's.
These were done with burrito style tortilla's, 8".
Heat some butter in a pan, spread some refried bean's on a tortilla, then add some cheese, I used Mexican style 4 cheese, add shrimp, pico, jalapeno's, more cheese, make sure you get plenty around the edge's so the other tortilla will stick to it, butter the top of the other tortilla. Put in the pan with the heated butter and when the cheese start's to melt start pressing the edge's together, this will help to keep everything in the tortilla's when you go to flip it. After you flip it and brown the other side, put it on a plate, let cool for a minute and then slice. And that my friend's is the way I make a quesadilla with shrimp, beef, chicken, ect. Enjoy

Same problem with shrimp in OK as here in LE…by the time they get them here the price triples! Thinking I need to be closer to the gulf.
