I tried out a new recipe this morning for something a little different. This was something I saw come across my facebook a few weeks ago and wanted to give it a try, and I'm sure glad I did as these will definitely be going into the rotation. Not only do they taste great, but there are only a few ingredients and they are really easy and quick to make.
3 bananas
2 eggs
1 tsp vanilla
1/2 cup of quick cook dry oats
1 tsp cinnamon
Mash up bananas with a fork then add the remainder of the ingredients and mix together thoroughly. Put a little olive oil in a pan and scoop batter in pancake portions. The trickiest part is knowing exactly when they are ready to flip because they don't quite bubble like regular pancakes. Flip once while browning each side.
