Smoking another batch of cheese. Hickory for smoke. Sharp cheddar, Colby, Pepperjack, Gilda.

Yum! I love smoking cheese.

I'm trying to get a feel for your sizes. Those are bigger chunks than I've done before. Would you say 1" x 2" x 3" approximately?

Online, check out the Tillamook HQ building. Quite an architectural wonder, both inside and out. It's actually a coop (go figure, it's in the Northwest...)
